My sister and I shall/will be visiting our aunt in New Zealand.

Based on traditional rules, which word in bold should I use?

I would say that "shall" would most likely be used by a BrE speaker, while "will" would be used by someone who speaks AmE. Could somebody please confirm/disprove that?

Very few speakers of BrE would use 'shall' in that sentence. Some of us, a minority, still use 'shall' after 'I' and 'we', but 'my sister and I' is one step too far for most of us.
