There are more possibilities of how to express that, depending on the type of the ship and the purpose of the travel. Among others you could say "go sailing", "go voyaging" or "go on a cruise".
"go shipping" is, as far as I know, not used.

No, we don't. You can travel by ship/take a ship, etc.
