[Grammar] Sentences that sound wrong but used in books anyway

Please help!

I encountered some sentences that I find wrong (I'm just "listening" to my ears) but I have seen in books. Some of these are the following:

- Express money as pesos and centavos through P100. (We express something in or through is it not?)
- Read and write money in symbols through P100. (The use of "through" here really confuses me because at first read I thought it meant reading and writing money in symbols using P100, while when I view the lesson, it meant up to.)
-What are given? (math word problem solving, which I think should be "what are the [details,facts, information] given?")
-What operation/s is/are to be used? (This sounds odd to me because of the placement of the linking verb but makes sense, although I find "What is/are the operation/s to be used?' sound much better.)
-How many ducks were grown? (I know poultry is being raised, not grown. Am I right?)

Is it right that I question such or it's just I have a poor grasp of English that they sound wrong to me but they are right?

Express here means write/ say/ put all money in pesos (instead of US$ or UK£)

through P100 means in all of p. 100. Through or throughout

What are given as data (data and information is noncountable and therefore the implied word after what is either data OR information and so this should read what IS given.)

What is/are the operation/s to be used? is awkward but commonly used. Is/are to be bascially means must: English is to be used in the forum - English must be used in the forum.

As for ducks ... I don't know! BUT poultry is noncountable and so the poultry IS being raised.

Never be frightened to ask questions whether one is confused or not!

Through means up to.
We will teach you how to write numbers up to 100 pesos (?)

Hi there! Sorry if I did not clarify what the symbol means in my post. It is for Philippine peso. It lacks the two dashes through it. I don't know how to encode symbols, too!

Have it edited, "IS" is what's on my mind but was not aware that I typed "ARE" (it happens to me once in a while).
