Those are all high probability activities but may just sounds so awkward here. Is might okay here?

"Might" is more natural. There are still some people who associate "may" with permission rather than possibility. If the things you listed are a high probability, I would expect to hear something like "So here's what I'll probably do - go to the ball game, ..."

I would go with "will probably do." Both modals sound too "iffy".

And I would use Emsr2d2's punctuation rather than the period after do.

And I wouldn't reply to a "So, ..." question with a "So, ..."answer. In this case, "Well, ..." would be common.
