I said
1) " Speak to you the other day".

Is it wrong?
Should it be

2) Speak to you another day?


3) Speak to you next time (that's correct, for sure).

#1 could work (with Piscean's previous observations about missing verbs and informal speech) if you changed the verb to the past tense. In that case, you're referencing a previous conversation, rather than a future one.

I spoke to you the other day.
 
None of them is 'correct'. In standard English, a sentence needs a subject and a finite verb, as in "I'll speak to you soon". We may omit these in informal conversation, in which case your #2 and #3 are possible.

If I were you, Piscean, I'd say it this way: " Yes, you can use your 2) and 3) in informal conversation and 1) could work if....
I would not start it the way you did " None of them is 'correct'".

Irinaofr, if you are going to respond to posts here you need to state that you are not a teacher. You could put that in your signature so you don't forget.

I used to encourage my students when I was a teacher, not to discourage them.
