Hello, I would like some help with punctuating the last sentence in this short dialogue:

COLE
You got the key! Did you say hello to the aliens down there?
WILLA
Yeah, I greeted the heck out of them! A heads up would have been nice Cole.
COLE
I like to surprise my friends.
WILLA
We are n...(deep breath) I like surprises Cole, just not the "life threatening" kind. I have to keep going, you know... to save you all.

I want to indicate an interruption with "We are n...". Willa stops mid word because she doesn't want to be mean. I was thinking of using an em dash but I'm not too sure.

An em dash is best.

I thought you shouldn't put a space after an em dash.
 
I think the punctuation is just fine as you have it, with n followed by the ellipsis ...

I think a dash works better when a word is interrupted. An ellipsis may be appropriate after a complete word.
