In this context, does the word "down" in "they're going down well" have anything to do with the action of drinking - as in "He downed the pint of beer" or does "go down well" mean the wines are being well received/the wines are catching on (the usual idiomatic meaning)?

I think the idiomatic meaning actually derives from the literal meaning of drinking/eating, so yes, both.
