1) He knew each one of his customer by name.
2) He knew every one of his customer by name.
Which is correct? If both, what's the difference? The examples are mine.
 
You could keep the singular 'customer' if you removed 'one of his'. It's not necessarily better, just an alternate option, with still no difference between 'each' and 'every'.

The first can be shortened. He knew each of his customers by name.
