The conversation is between Silver and his friend Hook.

Silver: Sometimes I use a meal replacement powder for dinner.
Hook: Why?
Silver: I don't want to eat too much in the evening.
Hook: Won't you feel hungry two hours later?
Silver: Of course I will but the hunger won't last for too long.

Would native speakers of English express the italic sentence like I did?

It begs the question "Too much for what?"

It strikes me, looking at the last line of the dialogue too, that you're using "too" to mean "very". I discourage learners from doing that.

That's a very subjective statement. What might be "too much" for you might be the perfect amount for someone else. If the meal replacement powder you use contains all the vitamins and minerals you're after, I'd be more inclined to think that you use it simply because it means you don't have to bother cooking!

This is one of the reasons, yes, it saves time. But even I choose to eat dinner, I avoid meat and rice, I'll eat vegetables and beans, for example, because eating much rice and meat will add to my weight, I'm already overweight. How can I express myself to ahieve my aim "I don't want to eat too much food for dinner because otherwise I'll be fatter".
