I was told "find someone doing something" is acceptable, but I'm not sure whether "find someone to do something" is acceptable or not. Any help will be appreciated.

Yes, it's acceptable, but it has a different meaning.

For example, "I found someone fixing my car" means I unexpectedly came across someone who happened to be fixing my car.

But "I found someone to fix my car" means I found someone who will fix my car sometime in the near future.
