I want to say something makes angry/upset.

Are these correct and natural?

1. It sets my hair on fire to see people throw plastic waste in natural areas.

2. It makes my blood boil to see people leave plastic garbage in nature.

3. It makes my heart ache to see people leave litter in nature.

What other ways are there to express this?

The third one does not express anger. Instead, it expresses sadness.

Try to ask about one thing at a time. You have in effect eighteen ideas here:

It sets my hair on fire v It makes my blood boil v It makes my heart ache
+
throw plastic waste v leave plastic garbage v leave litter
+
in natural areas v in nature

I thought maybe it's okay to have a few sentences since this is the editing section.

In any case, are the sentences natural-sounding?

It is, but if you are asking about phrases, change only one thing at a time, for example:

1a. It sets my hair on fire to see people throw plastic waste in natural areas.
2a. It makes my blood boil to see people throw plastic waste in natural areas.
3a. It makes my heart ache to see people throw plastic waste in natural areas.

This makes it easier for us to say that 'it makes my blood boil' is the only natural way to express anger. We can thne go on to say that 'in natural areas' is not natural. We'd say something like 'in the countryside' or 'in areas of natural beauty'.

"Hair on fire" is used to describe a person who is rushing madly.
