Later that afternoon we joined Nicole and her husband at the winery in Napa. Their wine was voluptuous and velvety. Before dusk, the wine was settled in me and I felt the world was wrapped in a burgundy mist.

If Nicole and her husband own the winery, use Their. If not, use Its or The.

I like that burgundy mist!
 
I like the Burgundy mist too.
 
It's the official name of that variety of wine and is, therefore, a proper noun. Just have a look at the Wikipedia article on Burgundy wine HERE and note the capitalisation.
 
The colour is named after the wine. The wine is named after the region in France. The region is named after the Germanic people who settled there. The people were named after an island where they originated (now called Bornholm, in the Baltic Sea). The island was possibly named after the Old Norse for 'high rock'.

So unless you're using the word to mean the colour, you should probably use a capital letter.
