Nothing, really.

I would use "to sweat" and "to perspire" to mean the same thing - liquid escaping one's body due to excessive heat, exercise, stress, a medical condition etc. "To perspire" could be said to be a little more formal.

There is a phrase in BrE: "Horses sweat, men perspire and women merely glow"!
