The context - I would tell a personal story about a memorable family meal.

"I shared this meal with my parents and siblings, and we sat around the table laughing and clinking our glasses of sparking juice and raising a cheerful cheers/toasted with glasses of sparking juice." Which of the options sounds natural, and what needs to be improved?

"I shared this meal with my parents and siblings, and we sat around the table laughing, and clinking our glasses of sparkling juice and raising with a cheerful happy "Cheers!" /toasted with glasses of sparking juice."

Which of the options sounds natural, and what needs to be improved?
See above. "Cheers!" is something you say; it's not a common noun. The repetition of "sparkling juice" wasn't natural and wasn't necessary. We clink our glasses against other people's while saying "Cheers!" We don't clink our glasses together randomly, and the say "Cheers!" later.
If you want to use "toast", say something like "... and we toasted [each other]".

Using "cheerful" before "Cheers!" doesn't work, simply because the two words are too similar.

Note that I've left "sparkling juice" on the assumption that it's a common drink in your part of the world. Here, it would done either with alcohol, or a non-alcoholic substitute. "Juice" refers to fruit juice and it would be very unusual to find a sparkling version of that.
