I have seen a sign saying that 'Sorry we're closed' on the door of a store and I was wondering if it should be 'Sorry, we're closed'.
Do native English speakers use the expression 'Sorry we're closed' without a comma for the situation or is a comma needed there to make sense?

I think signs tend to do away with punctuations for aesthetic reasons.

That's right. I hate to see the very common HURRY OFFER ENDS AT MIDNIGHT.
