Here in this recipe what does "For 6-8" mean? Is it a person or what, I didn't quite get it.

4-5 piece rolled brisket
Lard
6-8 fine large carrots, peeled
1 ¾ pts poultry stock, unsalted
Generous sprig of thyme
Salt, pepper, chopped parsley
