Compared it to the description "Westfield's offense had it all going in Friday's big win", I guess that "Westfield’s offense takes flight" means "Westfield’s offense goes very well."

Am I on the right track?

Flight-running away - the rival's running away -Centreville's running away and Westfield takes their flight as his prize?
 
No- they thrashed the other team. They played much better than them. The other team did not run away- they simply lost when up against a much better team.
