I want to describe a situation when there is no guilt in someone's face. Can I use "guiltless"? My dictionary says it means innocent which is what I mean.

Is there a word I can use instead of "guiltless" in this sentence?

He emerged from the room. Jane looked him over. She wondered why there was a smile on his guiltless face.

You've answered your own question: innocent.
I apologize because I meant to say "which is not what I mean". I'm looking for a word which means free of guilt. I mean there was no trace of a guilty conscious on his face.

Does 'blameless' work for you?
Actually, I think that's the same as innocent which is not what I'm looking for.

Imagine someone has done something bad and you expect them to feel and look guilty! Is there one word I can use to convey that?

She was surprised there was no trace of guilt on his face.

She stared at his....face wit surprise.

straight/nonchalant

Perhaps unquivering or unperturbed.

Perhaps you're looking for He looked as if butter wouldn't melt in his mouth. [link]

Note that we say that people have an expression on their face, not in their face.
