Both sentences are correct. Sentence A is much more common. Your final sentence would be fine if it said "Hey, the water is boiling! Would you please turn off the stove?"

Remember not to put a space after an opening quotation mark and to use the same kind of quotation mark at the beginning and the end of a quotation.

The present simple could be used in an exchange such as:

John: What happens to the water when the temperature reaches 100 degrees?
Jane: The water boils.

Your physics is fine provided a) the degrees are of the Celsius variety and b) the water is at sea level.

'..."right now" the water is boiling' indicates "A" is the correct choice.

"B" would be suitable if you are confirming that the task is being taken care of.

"Where's my water! I asked for it thirty minutes ago!"

"Sir, please be patient. The water is being boiled; we'll bring it to you as soon as it is ready."
