Wincing involves the entire body, just like flinching or recoiling. Say you, without looking, went to lean on a table and placed your hand a thumbtack. You'd snap your hand back and probably step away from the table in one motion. That's wincing.
Grimacing only involves the face. You'd have likely grimaced when you placed your hand on the tack.
