I think:
'Some' and 'any' and 'enough' are quantifiers. A quantifier is a kind of 'determiner'.
'too' as 'too much' is an adverb of determiner. 'much' is a quantifier (which is a kind of determiner).
'some' can also function as a 'pronoun' and an 'adverb'.
'any' can also function as a 'pronoun' and an 'adverb'.
'enough' can also function as a 'pronoun' and an 'adverb'.
'too' is ,generally speaking, an 'adverb'.
