Do we say "He had side part hair' or "He had middle part hairstyle"?

Is it correct to say "He parts his hair in the middle" or "He parts his hair in side"?

No.

Yes, if you end the sentence with appropriate punctuation.
… or "He parts his hair in side"?
No. You can say he parts it on the side.

In BrE:

If it's parted straight down the middle, say "He has a middle parting".
If it's parted off to one side, say "He has a side parting".
