Can we say:

-A 6 weeks' break?

I would prefer to say/write it as, "We are taking a six-week break."
 
Or "We are taking six weeks' break".

But I prefer Bill's too!

take a (six-week) break -- note the dash
take six week's break -- note the lack thereof
