I don't understand "complete with" here. It sounds as if that in the final stage (before you exist from the holiday), blood draws and nasal washes are carried out (by researchers).

Does "a holiday complete with blood draws and nasal washes" mean "a holiday accompanied by blood draws and nasal washes"?

To a native speaker "complete with" carries the sense that these were an integral activity. "Accompanied by" carries a sense that they were something extra.

In modern colloquial British English it is unusual to hear "exit" used in any sense except for the actual way out of a building.

The only exception, albeit a very large one at the moment, is the exit from the EU.
