Either one is OK, but "dentist".

They are both fine with "dentist's" in BE.

OK...I can go along with, "I went to university" and, "They took him to hospital", but what logic is behind this?

We generally say "I'm going to the dentist's" and "I'm going to the doctor's". We basically omit the word "surgery" from the end of the sentence.

It means 'place', as in, "I'm going to Tom's [place] for half an hour"; "I'm going to the baker's [shop]."
It's ubiquitous in AusE as well.
