[Grammar] 'all that' or 'all what'

I just want to know which sentence is correct. Sometimes I got confused whether to say 'all that' or 'all what':


All that she knows is that...
or
All what she knows is that...

The first one is correct. Note that neither is a sentence.

Thank you so much. Of course, they are not complete sentences. I just wanted to make sure about the correct grammatical structure.
Hence, is the pronoun 'all', in that case, should always be followed by "that" instead of "what"?

We hesitate to say 'always' and 'never' here. Whenever one of us does, somebody else is sure to find an exception to prove us wrong.

In any case, 'that' can usually be omitted.

'All I know about physics can be written on the back of a postage stamp.'

'All we can do is pray.'

'All they want for Christmas is their daddy to come home.'
