What is the difference between phrases "almost all of the students" and "almost all the students"?
Can I obmit "s" of the word "students"?

No difference in meaning. No, you need to say "students."
 
Why would you even think if would be okay to drop the S? What about "all" makes you think that "students" should be the singular "student"?
