1) Let's have omelet/salad for breakfast.
2) Let's have an omelet/a salad for breakfast.

Which is corret?
Do you regard omelet as a countable or uncountable noun?
 
For me, countable.

Let's have an omelette for breakfast.
Let's have omelettes for breakfast.

Note that in BrE, we use the original French spelling, ending -ette.

"Omelet/omelette" is countable in AmE also. Either "salad" or "a salad" would be correct in AmE.

I think 1 is OK if you're thinking about it as a foodstuff.
