I am writing to you because I have been planning to take part in a wildlife volunteering in Africa within next year and as I am so interested in what you are doing I was wondering if there is a possibility of working at (...) ?

Note that "wildlife volunteering" is wrong. Try:
I am writing to you because I [STRIKE]have been[/STRIKE] am planning to take part in voluntary wildlife [STRIKE]volunteering[/STRIKE] conservation work/projects/activities in Africa [STRIKE]within[/STRIKE] next year, and as I am so interested in [STRIKE]what you are doing[/STRIKE] your work, I was wondering if there is a possibility of working at (...).

"within next year" is wrong. You can use either "within the next year" (at some point in the twelve months starting today) or "next year" (at some point in 2021).

And I just wanted to ask if I could say "I have been planning" instead of "I am planning"?
 
That can imply that you've stopped (planning).
