I see my role as that of a facilitator, enabling other people to work in the way that suits them best.

I found a sentence from a dictionary, and I'd like to know what does "that" refer to?

'That' is a relative pronoun. Its antecedent is "the way".
 
I see my role as (that of) a facilitator.

I think "that of" is added for emphasis and can be omitted.

Abe: Which one are you?
Bob: I see my role as that of a teacher.

"I see my role as a teacher" doesn't work for me.

How about “I consider my role as a teacher”?

That seems unfinished. Perhaps:

My job as a teacher is to help people learn, but it is not to do the learning for them. My job is to steer them in the right direction, to help them find the right path.

Perhaps:

I consider my job as a teacher to be an important one. Of course, there are limits. You can lead the way, but you can't make people follow you. The learning is up to the student. The teacher is a guide. The student must want to learn and be willing to make changes or it won't happen. Some teachers talk about motivating their students. However, if a person isn't interested in learning the learning won't happen.
