Hello!

I need your help please!

Can we say:

-It's very hot in this room, I'm BAKING like a chicken!

-"Are you kidding?" or do we have to say "Are you kidding ME"?

-Next week, I'll have many things to tell you! OR "Next week I'll have many things to tell you ABOUT! ?"

1) I don't see why not, but you don't need to specify "like a ......". You can simply say "It's very hot in here. I'm baking!"

2) "Are you kidding?" is absolutely fine.

3) "Next week, I'll have lots to tell you" is a better way of putting it.
 
You can also say:

It's very hot in this room, it is baking.

just as you say:

It is very cold in this room, it is freezing.
 
I've certainly said "I'm melting" and "I'm roasting" but I've never said "I'm baking."
