Could I use bone-in ribs and bone ribs interchangeably?

For instance, "my uncle loves the smell of BBQ bone-in / bone ribs in the evenings 🍖."

No. The terms are either boneless or bone-in. We don't bother specifying if they're bone-in because with ribs, we expect the bone. We normally only specify if they're boneless.
