Can I delete "but" in the following sentence? Does it still make sense if I delete it?

I didn't like the ending, but otherwise it was a very good book. (https://learnersdictionary.com/definition/OTHERWISE)

Can I say #1"I didn't like the ending; otherwise, it was a very good book" or #2"I didn't like the ending; it was a very good book otherwise"?

Is it when we put "otherwise" at the end of the sentence, we need to add "but"?

No, it has nothing to do with "otherwise" being at the end. Those two parts did not connect well as they were, so I added "but" to link them.

How about "I didn't like the ending. It was a very good book otherwise"? if I use a full stop, do I need to add "but"?

Don't. There are contexts in which you can start a sentence with "But" but it shouldn't be done there.
