Person A: We’ll have a meeting at 2 pm.
Person B: I have another meeting scheduled.
Person A: I can do 4 pm or 5 pm.
Person B: Can you do 3 pm?

Is it correct to say “Can you do 3 pm?”?

B is likely to say something like "at that time" or "around then" at the end of that sentence.

It's possible but rather informal. Also, for example, "How about 3 PM?" or "Would 3 PM suit you?"
