Can't I say I don't like freezing cold day or sizzling day(as a polite way of expressing freaking cold day or hot day)?
And is it wrong to say the weather is freezing cold or sizzling?

It's not wrong to say a day is "freezing cold" or "sizzling hot", although I wouldn't use the latter. However, "I don't like freezing cold days" not "day" is correct. What, in your opinion, is impolite about saying "I don't like hot days".
