I don't think "mentor" is the word you need here? A "mentor" is a wise person, a trusted teacher. As far as I know, we don't teach cattle anything.

Let me then rephrase my question.

What do call a person who tames cattle?
 
If I understand your question correctly, I believe you would be referring to a farmer. Also known as Cattle farmer/dairy farmer. They don't "tame" cattle since here in the United states, there are not many "wild cattle". Most of, if not all cattle are domesticated and or tamed. Hope that helps!
