Hello,
Look at the picture above, please. If I pluralize them, should I call them "crumpled papers" or "crumpled pieces of paper"?

Use "crumpled pieces of paper". That they are pieces of paper is all we know about them. The term "papers" is usually used to describe documents (paper with something printed on it), identity documents, legal documentation and the like.
