Do we say "dance" or "dancing" in this case, please?

-I do/practice dance/dancing.

As a NES, but not a teacher, I would, personally, have said: "I practice dancing" (if I could actually dance!), however, I could also have said: "I attend dance/football practice on Fridays".

If you mean the kind of dancing you do in a club, then, yes, dancing.

But if it's, let's say, modern dance or dance as an art form, then you would use dance.

Yes, I agree with freezeframe.

I also tend to use the term "dancing" in the context of "ballroom" dancing, but "dance" in the context of the modern art form.
