Difference between 'all this' and 'all these'

Could somebody please explain the difference between 'all this' and 'all these'?
I remember reading 'all this' used in the plural sense.

It would be a lot easier for us if you could give some examples.

I hope the following example is good enough.

Suppose John embraces XYZ religion in the hope that it will give him peace of mind, good health and other benefits.. Instead, he encounters more problems. So he asks himself "What is happening? Can all this be called benefits?"

Should I use 'all these' instead?

I'd go for all this = the whole package.

I'd have no objection to all these.
