I wrote sentence by myself>>Koreans follow the original version of Christmas carols. Australians, meanwhile, change the lyrics of Christmas carols.

Do I have to pluralize version in this case?

And are there any more grammar points that I need to check?

I wrote this sentence myself: "Koreans follow the original version of Christmas carols. Australians, however, change the lyrics of Christmas carols."

Do I have to pluralize "version" in this case? No, but some people would.

And are there any more grammar points that I need to check?
No, but as a matter of style, you can avoid repeating 'Christmas carols' by ending 'Australians. however change their lyrics'.

It's a very sweeping statement. Have you any evidence for it?

There should be an original version of each song, so I think the plural of "version" is appropriate.
