Is the short form also correct when we are not talking about people?

1. "My eyes're green." Or 2. "My books're new."
 
Don't use that in writing.
In speech, "my eyes are green" can sound like "my eyes're green", but that's because of the phenomenon of connected speech.

It's fine to write quoted speech that way when you want to show how the speaker pronounces the phrase.
 
Since it's pronounced the same either way, there's no reason to contract the words. It's like writing sez instead of says.

So I wouldn't.
