I want to say a simple yet meaningful greeting.

I want to say a simple yet meaningful greetings.

The greeting I am referring to is Happy Birthday.

The question:

Could greeting without the -s be used as a noun?

It's usually plural.

To me all the above seem a bit odd. What about:

"I want to greet (object) in a simple yet meaningful manner."
