If I want to get feedback from a person who's just read the book, is OK to ask "How does this story grab you?" or "How do you find this story?"

I'd use the past tense. The person has just finished. How did you find it? How did it grab you?

Either is OK but the former statement of the two is less formal and falls into the category of slang or idiom.
