We use what do you think of when we ask someone's opinion on sth/ sb.
e.g. what do you think of my sister?
- I think she's lovely.
ON the other hand, is it also possible to ask it this way?
HOw do you think of my sister?

"How do you think of my sister?" sounds a tad strange. It sounds like you're asking someone how they view their relationship with your sister. (i.e. sexual, platonic, etc.)
