According to the dictionary 'go about doing something' means 'to do what is necessary to perform or achieve some action or task.'
https://idioms.thefreedictionary.com/go+about+(doing+something)

In what context would this complex pattern be preferable to just a simple 'do'?
For example, in what situation should I ask 'How should I go about doing this?' instead of 'How should I do this?'?

Only when you have not used your quota of words for the day.
