I wonder what the words "as in" relate to? I think they refer to "satisfied". I read it as "Happy as in satisfied, as it were".

It's used to show that he/she is about to clarify what they mean by "happy". They're giving a clear definition of the word they just mentioned.

I need a plug, as in the type that goes in the electric socket on the wall, not the type that goes in the bathroom sink!
