We say "I work nights" to say I work night shift or I go to work at night. In the same way can we say "I work days" to say I work day shift?

I suppose it's possible.

It's possibly, but not really necessary unless prior context has opened the possibility of confusion between night and day shifts.

We use 'work nights' to clarify a difference from the norm of working during the day. Typically it's not necessary to clarify working during the day, because that's when the majority of jobs are. Unless there's a reason the listener expects you to work nights, you don't need to clarify working the day shift.
