You can "keep the best for last". But that doesn't apply to "the hardest".

You could also say Save the best for last.

They really are two different things.

I can't think of an idiom for saving the best for last. I usually just say, '...save the best for last.'

If, by hardest, you mean the most difficult, then I might say, 'We'll cross that bridge when we come to it.'
