I have never seen this phrase before. I would have no idea what it meant. I would have guessed it meant something like "job shadowing" or working side-by-side with someone else who already does that job.

(It would be illegal in the US to have someone work unpaid for the first week, so perhaps that's why.)

Ah, I see. That's actually quite standard in the US. I understand now that it's not that you work without pay but that your pay is delayed. Thanks.
