Is there any obvious difference between "Let's keep moving" and "Let's keep it moving"? If I want to encourage people to keep moving on a hike, would both phrases work? What about if I want to tell people to keep working on a work project, would both phrases work?

You don't need to use 'it'. It's the people you want to keep moving. Use the former.

If you use 'it' you're saying to keep the project moving. If that's what you mean, then fine.

Let's assume you are talking about a project. I'm guessing you are the supervisor. I'm also guessing that you need to tell people to do their jobs. If I was on your team I would pretty much ignore that. Why? I'm going to do the job I was hired to do anyway. Not everything that can be said should be said.
